Zucchini Cobbler

Ingredients

Filling

  • 370 g frozen grated/chopped zucchini
  • 3 tbsp lime juice
  • 2 tbsp 100% apple juice not from concentrate
  • 1/3 c sugar
  • 1/2 tsp cinnamon powder
  • 1/4 allspice powder

Crust

  • 1 c flour
  • 2 tsp sugar
  • 5 tbsp vegan margarine
  • 1/3 tsp allspice powder

Instructions

Filling

  • Bring everything to boil for 10-15 minutes

Crust

  • Mix everything into crumbles texture

Cobbler

  • Mix filling with 1-2 tbsp crust, set aside
  • Pat some crust on the inside of your pie plate/bowl (as long as heat proof), ramekin
  • Pour filling then top with more crust crumbles
  • Sprinkle with cinnamon powder
  • Bake for 35-40 minutes on preheated 375 F
