Wild Rice and Sausage

Ingredients

  • 1 c wild rice
  • 1/2 - 1 bag of vegan sausage like veggie dog from st Yves, sliced or cubed
  • 3 c veggie broth
  • 1 tsp Maggi seasoning liquid
  • 1 large purple Onion chopped
  • 10 baby carrots chopped
  • 1/4 c olive oil
  • Enough hot boiling water

Instructions

  • Soak rice in hot boiling water for 5 mins, drain
  • Place rice, Maggi and broth in a pot. Bring to boil, then simmer for 45 mins
  • Meanwhile heat oil and saute onion and carrots until tender. Stir in veggies dogs, set aside while waiting for rice to cook
  • Once rice is cooked (there might be some broth still, it's fine), stir in onion mixture and reheat for 5-10 mins
  • Serve
