Vegan Lunch Plate

Ingredients

Rice

  • 1 c rice
  • 1/4 c burghul
  • 1/4 c white quinoa
  • 1 tbsp ground flax seeds
  • 1 tbsp Vegeta powder
  • Enough water

Veggies

  • A bag of mixed veggies
  • Vegeta powder as needed a pinch or two
  • Ground cumin as needed a pinch or two
  • Dried tarragon as needed "
  • Smoked paprika powder as needed "
  • 1-2 tbsp olive oil
  • Freshly cracked black pepper

Tofu

  • Storebought smoked tofu

Instructions

Rice

  • Rinse rice burghul and quinoa, place in rice cooker pot
  • Add enough water and stir in Vegeta and flaxseed
  • Press the cook button 😉

Veggies

  • Line aluminium foil on a pan, spray with oil light light
  • Mix everything and spread on pan
  • Bake on preheated 375 for 30 mins
