Heat oil saute onion garlic and mushrooms til soften then process into paste
In a bowl, mix the rest of the ingredients
Preheat oven to 390 F
Mix in mushroom paste into the bowl
Stir in 150 g breadcrumbs and 110 g chickpea flour (add more breadcrumbs and flour if mixture is too moist)
Shape into sausage but not too fat/thick
Bake for 20 mins
Serve in hotdog buns with roasted pumpkin chili (recipes a couple posts down) and your fav. Sauce
