Various Christmas Cookies

Ingredients

Chocolate Chips & Oatmeal Cookies

Wet Ingredients

  • 3/4 c butter softened (room temperature)
  • 1/2 c sugar
  • 1 1/4 c brown sugar dark or light is fine

Dry Ingredients

  • 2 1/4 c oats quick cooking
  • 1 1/3 c flour
  • 3/4 tsp BSoda
  • a pinch of salt
  • 1/2 tsp cinnamon powder optional, you can omit it

Coconut Ice

  • 2 c icing sugar
  • 160 ml sweetened condensed milk
  • 2 c unsweetened desiccated coconut you can obv used the sweetened, but it would be too sweet
  • red food coloring

Rocky Road

  • 500 g chocolate
  • 1/2 c peanuts
  • 1/4 c desiccated coconut sweetened or unsweetened is fine
  • 200 g marshmallows
  • 110 g gummies/lollies cut up

Ginger Cookies (Spicy)

Wet Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup sugar

Dry Ingredients

  • 2 1/2 cups flour
  • 1 1/2 baking soda
  • 1 tsp ground ginger
  • 3/4 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt

Instructions

Chocolate Chips & Oatmeal Cookies

  • Cream butter, sugar and brown sugar, then beat in 1 egg, 1 tbsp vanilla extract
  • Mix dry ingredients with wet ingredients, add choc chips, chill for 2 H
  • On preheated 350 F, bake cookies for 10 mins (you can bake a little longer for harder cookies)

Coconut Ice

  • Add icing sugar, condensed milk and coconut together, mix well, you can use food processor if you'd like to
  • Divide mixture into two. Spread the white mixture on a tray/mold, and chill until harden
  • Tint the other half with red food coloring, spread on top of white, chill until totally firm (about 4 H)

Rocky Road

  • Melt the chocolate (if you use double boiler, just chocolate, if you use microwave, you can add vegetable shortening) and the combine all the ingredients then spread into a tray, let it harden before slicing

Ginger Cookies (Spicy)

  • Cream butter and sugars then add in 1/3 cup molasses, mix well
  • Beat in 2 large egg whites, one at a time
  • Combine ingredients for dry
  • Mix dry ingredients and wet ingredients, a little at a time (in thirds)
  • Chill for an H
  • Roll small balls of dough in sugar and bake in preheated 350 F for 8 -10 minutes
