Two-Tone Chocolate Moringa Muffins

Ingredients

Chocolate

  • 1 c flour
  • 1/2 tbsp BP
  • A pinch of salt
  • 2 tbsp cocoa powder
  • 1/2 c milk
  • 3 tbsp oil
  • 2 tsp vanilla essence
  • 1 egg
  • 1/4 c lilac jelly homemade, from the other day
  • 1 handful raisins

Moringa

  • 1 c flour
  • 1/2 tbsp BP
  • A pinch of salt
  • 1 tbsp moringa powder
  • 1/2 c milk
  • 3 tbsp oil
  • 1 tsp lemon juice
  • 1/4 c lilac jelly homemade, from the other day
  • 1 handful semi sweet chocolate chips

Instructions

  • Grease muffin pan with melted unsalted butter, set to side
  • Preheat oven to 400 F
  • Make the chocolate layer first by mixing dry ingredients in a bowl, make a well in center.
  • Using food processor, mix milk, oil, egg, essence and jelly until completely combined. Pour into dry ingredients, mix to just combine.
  • Divide batter into 6 muffin holes, top with raisins
  • For moringa layer, do the same steps, then pour on chocolate layer. Top with chocolate muffins
  • Bake for 18-20 mins!
