Turkey and Cheese Muffin

Ingredients

  • 2 c flour
  • 1/4 c sugar or less if you prefer
  • 1 tsp soda
  • 2 tsps bp
  • 1/2 tsp salt or more if you prefer
  • 250 g smoked turkey breast cubed
  • 100 g monterey jack cheese grated
  • 1 egg
  • 1 cup water + 2 scant tbps of buttermilk powder
  • 225 g firm butter melted

Instructions

  • Preheat oven 375
  • mix dry
  • mix wet
  • pour wet into dry and mix just until incorporated (not over mixed)
  • bake for 18 mins, take out, sprinkle with cheese, and bake 2-3 mins more
