Taquitos

Ingredients

  • 6 lbs beef
  • 1 large can crushed tomatoes 398 ml
  • 3 c chicken broth
  • 1 1/4 c orange juice
  • 2-3 tbsp lime juice
  • 6-8 garlic sliced
  • 1 large white onion sliced
  • 1-2 tbsp Vegeta powder adjust the flavoring once cooked
  • 2 tbsp taco seasoning adjust the flavoring once cooked
  • 2 tbsp sunflower oil
  • White tortilla

Spice Rub

  • 1 tbsp oregano
  • 1 tbsp paprika powder
  • 1 tsp cayenne powder
  • 1 heaping tsp ground coriander
  • 1 tsp allspice powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 heaping tsp fine sea salt
  • A generous pinch of ground black pepper

Instructions

  • Mix spice rubs until completely combined, then rub the meat with a little of the mixture
  • Brown the meat with a little oil
  • Add in onion, garlic, cook til soften
  • Mix broth with orange and lime juice
  • Pour in half of the mixture into the pan, cook until orange juice is reduced
  • Add in 1/2 c crushed tomatoes, flip the meat, then spread 1/2 c more crushed tomatoes
  • Move everything into crockpot
  • In a bowl, mix leftover spice rubs, 1 c crushed tomatoes, rest of orange juice mixture
  • Pour the mixture onto crockpot
  • Season with Vegeta powder and Taco seasoning, and top with leftover crushed tomatoes
  • Slow cook for 8-10 H
  • Shred beef as filling for taquitos

Taquitos

  • Lay a tortilla, spread shredded beef, roll
  • Spray baking pan, place taquitos on pan, spray taquitos as well and brown them in 325F (10-15 mis)
