Szilvas Gomboc

Hungarian plum dumplings

Ingredients

  • 5 large potatoes or 1 bag baby potatoes
  • 6 tbsp aquafaba equals to 2 eggs
  • 2 1/2 c flour
  • A pinch of salt
  • 1 tbsp cinnamon sugar
  • 16 small plum halves
  • 1/2 c sugar
  • 1/2 tsp cinnamon power
  • 1/4 c vegan margarine
  • 1 c plain bread crumbs

Instructions

  • Boil potatoes, drain, mash
  • Add in aquafaba, flour, salt, sugar, knead
  • Roll flat, slice into portions
  • Place halve plums on each, top with sugar and cinnamon powder
  • Shape into balls
  • Bring water to boil, drop dumplings and cook til floating, drain
  • Heat margarine til melted, stir bread crumbs, cook til browning
  • Roll dumplings on bread crumbs
  • Serve with icing sugar
