Sweet and Sour Caribbean Chicken

Ingredients

  • 2 chicken breast skinned, boned
  • 1 tbsp fresh lime juice
  • 1 green onion thinly sliced
  • 1 1/2 tbsp crushed pineapple
  • 1 1/2 tbsp ketchup
  • 1 1/2 tsp hot pepper sauce I used Grace
  • 1 ripe tomato
  • 1 garlic clove
  • 1/4 cm ginger skinned
  • 1 tsp ground black pepper
  • salt and sugar to taste

Instructions

  • Wash clean the chicken then slash at intervals using knife, place in a baking dish
  • Preheat oven to 400 F
  • Using food processor, mix tomato, ginger and clove, then place the mixture into a bowl.
  • Add sliced green onion, crushed pineapple, lime juice, ketchup, salt
  • and sugar, plus ground black pepper into the bowl, mix well
  • Pour mixture onto the chicken. Bake for 30 minutes, uncovered
