Strawberry Pancake

Ingredients

  • 1 c flour
  • 2 tbsp sugar
  • 1/2 tsp BP
  • a pinch of salt
  • 2 tbsp coconut oil melted
  • 1 c nut milk
  • 1 tsp vanilla essence
  • fresh strawberries
  • strawberry jam
  • pancake syrup of your choice optional
  • olive oil

Instructions

  • Mix dry ingredients in a bowl, pour in wet ingredients, stir to combine
  • Strain if needed, to ensure no lumps
  • Brush Teflon with a tsp olive oil on medium heat
  • Pipe/pour/squirt some batter on Teflon as shown on picture (like a whirl) - you can use piping bag or pancake bottle, or even spoon/measurement cup.
  • Cook for 2-3 minutes, covered, until pores appeared.
  • Flip and cook for another 1 minute
  • Roll pancake into flower shaped.
  • Put a spoon of strawberry jam on serving plate and place pancake flower on the jam
  • Decorate with sliced strawberries (for the leaves, I cut some fragrant leaf, *Pandan*)
