Strawberry and Cream Cake

Ingredients

Cake

  • 1 1/2 c flour
  • 3/4 c sugar
  • 1 tsp BS
  • a pinch of salt
  • 5 tbsp vegetable oil
  • 1 tsp vanilla essence
  • 1 tsp vinegar
  • 1 c water

Glaze

  • 1/2 c water
  • 1 heaping tbsp strawberry jam
  • 1/4 tsp agar-agar powder
  • 5 small size strawberries pureed

Cream

  • 1 can thick coconut milk chilled in the fridge overnight
  • 3 tbsp icing sugar

Instructions

Cake

  • Cake: Preheat oven to 350 F. Line a square pan with parchment paper. Mix dry ingredients, mix in wet ingredients, pour batter into prepared pan, bake for 25-30 mins, until toothpick inserted near center comes out clean. Cool to room temperature

Glaze

  • Glaze: Bring to boil water, powder, jam. Stir in strawberry pureed, cook for another 2 mins. Cool slightly.

Cream

  • Cream: Scoop the solid cream from the chilled coconut milk, beat along icif sugar until whipped cream consistency

Assemble

  • Assemble: Poke holes on cake, pour glaze on top, chill cake for 30 mins. Cover with cream and decorate with strawberry slices. Chill an H before serving.
