Stir Fry Quinoa

Ingredients

  • 1 1/2 c water
  • 1 c quinoa
  • 1/2 of a large purple Onion sliced
  • 3 garlic sliced
  • 2 tbsp olive oil
  • 2 red bird eye chilies sliced
  • Magi seasoning liquid as needed
  • 250 g frozen brussel sprouts
  • 1/4 c water
  • 1/2 tbsp vegan margarine/butter
  • 1/2 tsp sugar
  • A pinch of salt
  • 1/2 tsp nutritional yeast
  • 1 tsp corn starch

Instructions

  • Cook quinoa in water to a boil, then simmer for 10-12 mins
  • Mix brussel sprouts with water sugar salt yeast and starch in a bowl, stir then cover with cling wrap and poke a hole small hole or two, micro on high for 4 mins
  • Heat oil, saute onion garlic and chillies
  • Stir in brussel sprouts and quinoa
  • Season with Magi
