Combine starter, sugar, salt, lukewarm water
Add in and knead flour, water, Bsoda
Brush your bowl with olive oil, coat the dough by rubbing it on the bowl, sides and all around. Rest for an H.
Knead again by folding sides to center, let rest for another H.
Repeat this step for another 4 times. Dough should be elastic and nice by then.
Wrap dough with its bowl, in cling wrap and chill overnight.
The next day, take out dough and dump on lightly floured surface. Shape into a log.
Slice into 7 portions, roll each into ropes, then shape them into pretzels. Cover with cling wrap or tea towel, let rest in room temperature for 1-2 H
Preheat oven to 450 F (convection oven)
Bring to boil water and BSoda
Bath pretzels for 10 secs on both sides, place them on baking pan (with parchment paper)
Brush pretzels with egg
Sprinkle with Coarse salt and Sesame seeds
Bake for 15 mins
Serve fresh warm is the best 🤤
