Serundeng Daging Giling

Toasted Coconut with Ground Beef

Ingredients

Beef Spices

  • 500 g lean ground beef
  • 1/2 of a small onion
  • 4 garlic
  • 1 tbsp sunflower oil
  • 2 tbsp water
  • 1/2-1 tsp ground coriander
  • 2 tsp chicken bouillon powder

Serundeng Spices

  • 1.5 bags of unsweetened desiccated coconut
  • 1/2 onion
  • 5 garlic
  • 1 thumb ginger
  • 1 tsp ground coriander
  • 1/4-1/2 tsp galangal powder
  • 2 tbsp sunflower oil
  • 2 tbsp water
  • Dark rown sugar to taste
  • Chicken bouillon powder to taste
  • A little water

Instructions

  • In a food processor, mix onion, garlic, oil, and water until smooth, set to side.
  • Brown beef, then pour in onion mixture, stir and cook until beef is cooked through, season with chicken bouillon powder and ground coriander. Spoon beef onto a plate.
  • Using the same food processor, mix garlic onion, water, oil, ginger until smooth.
  • Using the same pan, pour in the paste, saute til fragrant then stir in coconut.
  • Add in brown sugar, chicken bouillon powder and water, stir to combine well.
  • Add in cooked beef, stir well. Cook until coconut are browning, on medium heat, stirring continuously.
  • Serve with rice
