steamed cassava bites

Ingredients

  • 1 bag of frozen grated cassava thaw, drain from the water (425g)
  • 3/4 c sugar
  • 2 tbsp corn starch
  • 1 tsp agar-agar powder optional
  • 1/2 c thick coconut milk from can
  • Pandan paste
  • red food coloring Wilton is vegan friendly
  • vanilla extract
  • 1/2 bag of unsweetened desiccated coconut
  • a generous pinch of salt
  • 2-3 tbsp water

Instructions

  • Preheat a steamer, lined with banana leaf
  • Mix cassava, sugar, agar-agar, and cornstarch in a bowl, stir in coconut milk
  • Divide mixture into two, colored one with a drop of pandan paste, while the other half with red food coloring and vanilla extract
  • Pour mixture on steamer and steam for 40 mins
  • Meanwhile, place coconut in a bowl, add in water and salt, mix. Microwave for 1 minute
  • Slice cassava cake into bites and roll in coconut
  • Push cake bites onto skewer
