peanut sauce

- 500 g roasted peanuts
- 3-5 red bird eye chilies
- 3 garlic sliced and fried til golden brown
- 3 kafir lime leaves
- Brown sugar to taste
- A pinch or two kaempfaria galangal powder
- 1 thumb tamarind seedless, soak in 1/4 c hot water
- Enough water thicker or thinner sauce depending what you like
- Salt to taste
