Sambal Bajak

Indonesian Hot Sauce

Ingredients

  • 2 c packed of thawed red bird eye chilies yes I bought frozen chilies, cheaper than fresh ones and I can just grab them from the freezer whenever I need to make hot sauce – convenient 😊
  • 4 garlic
  • 3 large shallots
  • 1-2 tbsp shrim paste terasi/belachan
  • 1 tbsp vinegar
  • 3-4 tbsp packed demerara style brown sugar
  • Salt sugar to taste
  • 2 kafir lime leaves
  • 1/2 – 3/4 c water
  • 4-5 tbsp peanut oil

Instructions

  • Into a wok/pan, place 2-3 tbsp peanut oil, then add in chilies, shrimp paste, shallots and garlic. Cook for 8 minutes on low-medium heat, covered. Stir occasionally.
  • Dump mixture into an electric blender or food processor, add in 2-3 tbsp peanut oil. Process until smooth. Dump mixture back into the pan.
  • Pour in water, start cooking on low-medium heat, add in kafir lime leaves.
  • Season with vinegar, salt, sugar, brown sugar, and cook for at least 8 mins (until changed in color and thickened).
