Ingredients

  • 120 g rice rinsed
  • 500 ml milk
  • 100 ml water
  • 20 g unsalted butter
  • 1/2 c raisins or dried cranberries/blueberries
  • 2 eggs separated
  • 1 tsp vanilla essence
  • 1/2 tsp lemon juice or 1 lemon skin, grated

Instructions

  • Bring to boil on medium heat until liquid absorbed, rice, milk, water
  • Cool for 10 mins then stir in butter and raisins
  • Beat yolks with essence and juice (or lemon skin), then stir into rice
  • Whisk egg whites until stiff, then fold into rice
  • Bake on preheated 350 F convection oven, for 40 mins
  • Cool completely before slicing (also nice served chilled)
