Bring to boil on medium heat until liquid absorbed, rice, milk, water
Cool for 10 mins then stir in butter and raisins
Beat yolks with essence and juice (or lemon skin), then stir into rice
Whisk egg whites until stiff, then fold into rice
Bake on preheated 350 F convection oven, for 40 mins
Cool completely before slicing (also nice served chilled)
