Ingredients

  • 1 eggplant 500-600 g
  • 2 zucchini 200-300g each
  • 2 c cherry tomatoes
  • 2 large celery stalks
  • 1 bell pepper
  • 1/2 tbsp each garlic power dry oregano, sugar, ketchup
  • 1 1/2 tbsp flake parsley
  • 2 onions chopped
  • 1/4 tbsp salt

Instructions

  • Cubed eggplant
  • Slice zucchini and bell pepper
  • Chop celery
  • Mix all in at least 5 quart Crock-Pot and cook high for 4-5 H
