Quinoa Wraps

Ingredients

  • Cooked quinoa 1 c dry in 1 1/4 c water
  • 1 yellow bell pepper
  • 1 small purple onion sliced thinly or diced
  • 1 tsp minced garlic
  • 1 bag frozen spinach thawed, rinsed, squeezed
  • 1 box firm Tofu cubed
  • 1-2 tbsp olive oil
  • 2 red bird eye chilies sliced
  • Magi seasoning to taste
  • Sesame oil to taste
  • Tortilla

Instructions

  • Heat oil, saute onion garlic chilies
  • Stir in spinach, cook for 5-8 mins, covered, medium heat
  • Stir in bell pepper, cook for 5 mins
  • Add in quinoa and season with sesame oil and Magi
  • Wrap with tortilla and enjoy as is or with sriracha
