Quinoa with Pad Thai Sauce

Ingredients

  • Half a bag of baby carrots thinly sliced into sticks or grate into thin long sticks
  • 1 c white quinoa
  • 1.5 c water
  • 2 c soy curls soaked in hot water for 1-2 mins, drain
  • 1/4 large onion sliced
  • 3 garlic sliced
  • 1 tbsp olive oil
  • 1/2 tsp ready to use minced ginger

Instructions

  • Bring to boil quinoa in water, then simmer uncovered for 10-12 mins, until water absorbed
  • Saute onion, garlic, ginger in olive oil
  • Stir in baby carrot, cook for 2 mins, covered
  • Stir in 1/2-1 tsp sesame oil
  • Stir in soy curls and quinoa
  • Season with Maggi liquid seasoning, Vegeta powder and 1/2 bag of VH pad Thai sauce
  • Stir in 1 c frozen spinach, take off from heat
  • Serve immediately
