Quinoa Salad and Fried Tempeh

Ingredients

  • 1 block of tempeh
  • 1 large yan
  • cooked quinoa as much as you like
  • canned chickpeas as much as you like
  • canned sweet peas as much as you like

Instructions

Tempeh

  • Sliced fresh tempeh marinate in water solution (water, salt, garlic powder) and fry until brown

Yam

  • Place in a deep dish pie bowl, prick with forks all over, cover with cling wrap loosely (and poke holes too on the wrap), microwave on high til soften (how long is depending how big your yam is)

Quinoa Salad

  • Cooked quinoa mixed with canned corn, peas, chickpeas. Seasoned with whatever you wish (ours were with a little lemon juice, a drop or two spicy liquid seasoning etc)
