Pumpkin Pretzels Cookies

Ingredients

  • 2.5 c strong baker’s flour
  • 1 tsp BSoda
  • A pinch of salt
  • 1 bag of pretzels I only used as much as I wanted
  • 2 eggs
  • 1/2 c peanut oil
  • 1/2 c pumpkin puree
  • 1/2 c demerara style brown sugar
  • 1 tsp Vanilla essence
  • Choc chips

Instructions

  • Preheat oven to 350 F
  • Crush pretzels into a small bowl or plate
  • In a bowl, mix flour, Bsoda and salt, set aside
  • In a food processor, mix sugar, egg, oil, essence, pumpkin to combine well
  • Pour liquid mixture into dry mixture, mix to completely combined, while adding crushed pretzels as well chocolate chips
  • Drop dough per tbsp or scoop onto baking sheet, flatten slightly, and bake for 8-10 mins
