Pumpkin Muffins

Ingredients

  • 2 c strong baker’s flour
  • 1 tbsp BP
  • A pinch of salt
  • 1/2 c semisweet chocolate chips
  • 1/2 c raisins
  • 1/2 c walnut halves
  • 2 eggs
  • 1/2 c + tbsp demerara style brown sugar
  • 1 tbsp vanilla essence
  • 1/2 c pumpkin puree
  • 1/2 c milk
  • Cinnamon powder a pinch
  • Allspice powder a pinch
  • 6 tbsp peanut oil
  • Cinnamon sugar
  • Ginger powder

Instructions

  • Grease muffin pan with peanut oil, set aside
  • Preheat oven to 400 F
  • In a bowl, mix flour, BP, salt, raisins, choc chips and walnuts
  • In another bowl, beat eggs, milk, puree, sugar, essence, spice powders and oil until fully combined
  • Fold in dry ingredients, mix until just combined
  • Divide into 6 and top with cinnamon sugar and ginger powder
  • Bake for 18 mins
