Pumpkin Doughnut

Ingredients

  • 1/4 c almond milk lukewarm
  • 1/2 tsp sugar and 1 tsp active dry yeast
  • 2 c flour into stand-up mixer with dough hook attachment
  • 6 tbsp dark brown sugar
  • 1 tsp cinnamon powder and 1/2 tsp allspice powder
  • 1/2 cup pumpkin puree

Ganache

  • 2 tbsp vegan margarine
  • 1 handful dairy free Choc chips
  • 2 tsp almond milk

Topping

  • Vegan sprinkles

Instructions

  • Pour milk into a bowl, sprinkle with sugar and yeast, let bloom
  • Using electric mixer, mix flour and sugar, followed with spices
  • Mix in puree, yeast and margarine
  • Cover with clip wrap, let stand in warm place 30 minutes
  • Roll flat dough and cut with donut cutter, let rest for another 15 minutes
  • Fry for a minute each on each side, until golden brown

Ganache

  • Melt chocolate on double boiler
  • Stir in almond milk
  • Coat doughnuts in icing sugar
  • Spread ganache on doughnut
  • Brush vegan margarine on doughnut and top with sprinkles
