Indonesian Pineapple Tart Cookies

Ingredients

  • 3 1/2 c AP flour
  • 3/4 c icing sugar
  • 3 yolks
  • 1 lb butter

Pineapple

  • 1 pineapple
  • 1/3 c sugar
  • A generous pinch of cinnamon powder
  • A tiny pinch of fine sea salt

Egg Wash

  • 1 yolk

Instructions

  • eel and clean pineapple, then slice into portions, then process in a blender if not processor
  • Pour pineapple into a pan, add in sugar and salt
  • Cook by stirring occasionally yet often once it's thickening
  • You want to cook the mixture into thick jam, no liquid whatsoever
  • Cool completely before using
  • Cream butter, then cream in icing sugar, followed with yolks, one at a time
  • Fold in flour
  • Scoop dough, flatten and fill center with pineapple jam
  • Shape into rounds
  • Brush with yolk, bake for 10 mins, rotate pan, then bake for another 5-8 mins
  • Cool on rack
