Pour pineapple into a pan, add in sugar and salt
Cook by stirring occasionally yet often once it's thickening
You want to cook the mixture into thick jam, no liquid whatsoever
Cool completely before using
Cream butter, then cream in icing sugar, followed with yolks, one at a time
Fold in flour
Scoop dough, flatten and fill center with pineapple jam
Shape into rounds
Brush with yolk, bake for 10 mins, rotate pan, then bake for another 5-8 mins
