Indonesian pineapple tart cookies

Filling
- 1 ripe pineapple
- 1/4 c sugar
- 1 cinnamon stick
- A pinch salt
Cookies
- 1 c icing sugar
- 1 c vegetable oil
- 3 c flour
- 2 tbsp cornstarch
- Cloves optional
- Yellow food coloring optional
- Vegan eggwash or regular eggwash optional
Filling
Grate pineapple
On non stick pan, mix grated pineapple, sugar, cinnamon stick, and a pinch of salt
Cook on high til bubbly then lower to medium low heat, keep stirring until no more liquid and mixture is moldable
Cool completely before shaping into balls
Cookies
Mix oil and icing sugar in a bowl
Mix flour and cornstarch on a separate bowl, then mix mixture into wet ingredients, knead
Pinch dough, flatten it, place a ball of filling, seam to seal into a round or whatever shape you wish
Place a clove on top
Bake on preheated 350 F convection oven for 12 mins
Cool on rack completely
