Matcha Marshmallow Fluff Muffins

Ingredients

  • 2 c flour
  • 1 tbsp BP
  • 1/2 c sugar
  • 2 tbsp matcha powder
  • A pinch of salt
  • 2 eggs
  • 6 tbsp sunflower oil
  • 1 c milk
  • Marshmallow fluff
  • Melted unsalted butter

Instructions

  • Preheat oven to 400 F
  • Brush cupcake pan with melted butter, set to side
  • In a bowl, mix flour, baking powder, sugar, matcha, and salt, until completely combined
  • In a food processor, mix milk, oil, and eggs, then pour into dry mixture. Mix until just combined.
  • Spoon some batter onto cupcake pan, top batter with marshmallow fluff, then top again with batter, and lastly, top it again with fluff
  • Bake muffins for 18-20 mins
