Maple Toffee Cookies

Ingredients

  • 2 1/2 c flour
  • 1 tsp Bsoda
  • a pinch of salt
  • 1 c cooking oil like peanut or corn oil
  • 1 c dark brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 1/2 tbsp vanilla essence
  • 1/2 tbsp maple extract
  • 1 c Skorr toffee bits
  • 1 handful walnut
  • Choc chip as needed optional

Instructions

  • Mix flour, salt, and baking soda in a bowl, set to side
  • Chop walnut into fine pieces, set to side
  • Preheat oven to 350 F
  • In a bowl, cream sugars, oil, essence and extract until completely combined, then beat in eggs, one at a time
  • Fold in dry ingredients, followed with toffee bits and walnut pieces
  • Drop dough per tbsp and top with 1 choc chip each, on ungreased nonstick pan
  • Bake for 8-10 mins, let stand on pan for 5 mins, then cool completely on cooling rack
