Mix dry ingredients in bowl until completely combined, set aside
In a 1 c measuring cup, pour lemon juice, then fill up milk to the brim. Pour mixture into a food processor. Add in eggs and vegetable oil, mix til completely combined.
Pour liquid into dry ingredients bowl, mix just to combine. Do not over mixed.
Divide batter evenly (this makes 6 large muffins), then bake on preheated 400F for 18-20 mins.
Meanwhile, grate a lemon peel (wash clean lemon first).
Take out muffins from pan. Quickly mix icing sugar and lemon juice, and glaze the top of the muffins, and top each with grated lemon peel
