Lemon Poppy Seeds Muffins

Ingredients

  • 2 c flour
  • 1/2 scant c sugar
  • 2 tbsp poppy seeds
  • 1 tbsp BP
  • A pinch of salt
  • 2 tbsp lemon juice watch the vlog
  • Enough milk
  • 2 eggs
  • 6 tbsp vegetable oil
  • 2 tbsp icing sugar
  • 3 tsp lemon juice
  • Grated of lemon peel

Instructions

  • Mix dry ingredients in bowl until completely combined, set aside
  • In a 1 c measuring cup, pour lemon juice, then fill up milk to the brim. Pour mixture into a food processor. Add in eggs and vegetable oil, mix til completely combined.
  • Pour liquid into dry ingredients bowl, mix just to combine. Do not over mixed.
  • Divide batter evenly (this makes 6 large muffins), then bake on preheated 400F for 18-20 mins.
  • Meanwhile, grate a lemon peel (wash clean lemon first).
  • Take out muffins from pan. Quickly mix icing sugar and lemon juice, and glaze the top of the muffins, and top each with grated lemon peel
