Lemon Cranberries and White Choc Chips Cookies

Ingredients

  • 2.5 c strong baker’s flour
  • 1 tsp BS
  • A pinch of salt
  • 1 c halved cranberries
  • 2 tbsp icing sugar
  • 2 eggs
  • 1/2 c packed demerara style brown sugar
  • 1/2 c regular white sugar
  • 1 c peanut oil
  • Lemon oil to taste at drop or two
  • 1 tsp lemon juice
  • 1 handful white chocolate chips

Instructions

  • Mix dry ingredients in a bowl, set to side
  • Process eggs, sugars, oils, and lemon juice until completely combined, set to side
  • Mix halved cranberries with icing sugar
  • Preheat oven to 350 F
  • Pour in wet ingredients into dry ingredients, mix, then add in chocolate chips and coated cranberries, mix until completely combined
  • Drop by cookie-scoop on ungreased pan, bake for 8-10 mins
  • Cool on rack and enjoy 😍
