Lemon and Blueberry Muffins

Ingredients
- 2 c flour
- 1/3 c sugar
- 1 1/2 tsp BP
- 1/2 tsp BSoda
- A pinch of salt
- Grated lemon peel from 1 lemon or a drop or two of lemon oil - it seems I forgot to show and mention it on the vid!
- 1 c nut milk
- 1/3 c corn oil
- 1 tbsp lemon juice
- 1 1/2 tsp vanilla extract
- 1 c frozen blueberries
Instructions
- Mix dry
- Add in wet
- Mix until just combine
- Fold in blueberries
- Bake on preheated 350 F 25 mins
- Icing (optional)
- Enough icing sugar
- A couple drops of lemon juice
