Ingredients

  • 8 bags of fresh bell peppers @3 bell peppers per bag halved and deseeded. Wash clean and thinly sliced
  • 1 medium size onion diced
  • 3 cloves of garlic diced
  • 1-2 tbsp olive oil
  • 1 bag meatless sausage/wieners storebought or homemade, sliced
  • 1 big can if crushed tomatoes 798 ml

Instructions

  • Heat oil and saute onion and garlic until fragrant
  • Stir in sliced bell peppers and pour in 1 c water, cover with lid, cook for 15 mins
  • Stir again and cover with lid, cook until bell peppers are super soft and water somewhat evaporates.
  • Pour in crushed tomatoes, stir, add in sliced sausage, seasn, cover with lid and cook for another 10 mins
  • Serve warm with sourdough bread, yum!
