Heat oil and saute onion and garlic until fragrant
Stir in sliced bell peppers and pour in 1 c water, cover with lid, cook for 15 mins
Stir again and cover with lid, cook until bell peppers are super soft and water somewhat evaporates.
Pour in crushed tomatoes, stir, add in sliced sausage, seasn, cover with lid and cook for another 10 mins
Serve warm with sourdough bread, yum!
