Coconut Pandan Cookies

Ingredients

  • 2.5 c strong baker’s flour
  • 1 tsp BSoda
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 c sugar
  • 1 c peanut oil
  • 1 tsp pandan paste
  • Demerara style brown sugar for filling
  • 1/4 c unsweetened desiccated coconut
  • A pinch of salt

Instructions

  • Preheat your oven to 350 F
  • Mix flour, soda, and salt in a bowl.
  • In a separate bowl, cream sugar, eggs, paste, and oil.
  • Mix in dry ingredients until completely combined.
  • Spoon 1 tbsp of dough, flatten and fill center with demerara brown sugar, then shape into rounds.
  • Mix coconut with salt.
  • Roll cookie balls on coconut, place on ungreased cookie sheet, and flatten slightly.
  • Bake for 8-10 mins, cool on rack before storing.
