Hearty Stew

Ingredients

  • 1/2 of a large purple onion chopped
  • 3 garlic chopped
  • 2 celery stalks diced
  • 15 baby carrots diced
  • 1 potato peeled and diced
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 2 c water
  • 1 c veggie broth
  • 4 c mushroom broth
  • 4 tbsp quinoa
  • 1/2 c brown rice
  • 1 c tomato puree
  • Salt and Vegeta powder to taste
  • A pinch or two cayenne powder
  • 1/4 c corn kernel from can
  • 1/2 c peas from can
  • 1 canned red kidney beans drain
  • 1 canned white kidney beans drain
  • 1-2 tsp lemon juice

Instructions

  • Heat oil and saute the first 5 ingredients, for 2 mins, then stir in flour
  • Pour liquids, stir, then add in rice, quinoa, puree and season. Bring to boil for 5 mins then simmer for half H (or until rice is cooked)
  • Add in the rest and stir in juice, cook for another 5 mins
