Grilled Sweet Potatoes and/or Yams

Ingredients

  • 2 super large sweet potatoes
  • 1 tbsp salt
  • Water
  • 2 tbsp olive oil
  • 1/2 - 1 tsp minced garlic
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne powder optional
  • 2 tsp parsley flakes

Instructions

  • Cover sweet potatoes with water in a pot
  • Add in salt
  • Bring to boil and cook for 15 mins long (soft but still firm)
  • Drain and cut into wedges
  • Mix olive oil, garlic, thyme, a tsp parsley, and cayenne if using
  • Brush wedges and grill for 7 mins
  • Sprinkle with the other tsp of parsley, serve
