Green Tea Macarons

Ingredients

  • 1/3 c prepared aquafaba
  • 1/4 tsp cream of tartar
  • 1/2 c berry sugar
  • 1 tbsp green tea leaf
  • Almond meal
  • 1/2 c icing sugar
  • 1/2 c evaporated coconut milk
  • 100 g dark choc
  • 100 g df choc chips

Instructions

  • Beat aquafaba and cream of tartar until frothy, beat in berry sugar a little at a time, until stiff
  • Place green tea in a 1/2 c measuring cup, fill up with almond meal
  • Sift along with icing sugar
  • Fold in dry mixture into beaten aquafaba, add in green food coloring
  • Pipe and let stand 2 H then bake in preheated 200 F for 30-35 mins, let stand for 15 mins
  • Heat milk 1 min in microwave, stir in chocolates to melt, let stand til thicken
  • Pipe ganache on cookies and sandwich them, chill a couple of H or overnight is best
