Fudgey Minty Brownies

Ingredients

  • 100 g mint milk chocolate
  • 100 g dark chocolate
  • 150 g unsalted butter or golden vegetable shortening
  • 3 eggs
  • 1 heaping tsp Mexican vanilla blend
  • 1 c sugar
  • 3/4 c enriched strong baker’s flour
  • 1/4 c each skim milk powder and cocoa powder
  • A pinch of fine sea salt
  • Salted cashew optional

Instructions

  • In a bowl, mix dry ingredients
  • In another bowl, whisk eggs
  • Melt butter and chocolate in microwave at 30 seconds intervals, mix to combine
  • Pour butter mixture into whisked eggs, whisk to combine
  • Whisk in sugar until completely combined
  • Fold in dry ingredients a little at time until just combined
  • Spread mixture onto a pan
  • If you'd like to, top with cashew
  • Bake on preheated 350F 25 mins
