Fu Yung Hai

Ingredients

  • 12 eggs
  • Pinch of salt
  • 4 green onion
  • 1/2 large onion
  • 4 garlic
  • 2-3 tbsp cornstarch
  • Enough water
  • 1 tbsp peanut oil
  • 1 can of sliced mushroom buttons
  • 1 can of mixed veggies green beans, peas, corn, carrots
  • 400 ml water
  • Ketchup sugar, vinegar, salt to taste

Instructions

  • In a small bowl, dilute cornstarch in enough water
  • Slice green onion, onion and garlic, thinly, separately
  • In a bowl, beat eggs with a little salt and the green onion
  • Heat pan, brush with peanut oil, turn beaten eggs into 3-4 omelets, set to side
  • Heat pan with a little peanut oil, saute onion and garlic til softened, stir in rinsed canned veggies, cook for a minute or two
  • Pour in water, add ketchup, salt, sugar, vinegar, you want to achieve sweet and sour flavor
  • Cook til bubbling, then pour in cornstarch, stir quickly
  • Pour sauce onto omelet, serve immediately with warm rice
