Sweet and Sour Omelet

Ingredients

  • 8 extra large eggs beaten, season with a pinch of salt
  • A bunch of baby carrots slice
  • A bunch of sweet snap peas slice
  • 2 tbsp sunflower oil
  • 3 garlic thinly sliced
  • Ketchup sugar, apple cider vinegar (or regular white vinegar), to taste
  • Water as needed

Instructions

  • Brush nonstick pan with a little butter, make 3 omelets of the beaten eggs, set to side stacked.
  • Heat oil, saute garlic til fragrant, stir in washed and sliced baby carrots and sweet snap peas, cook for 2 mins, then season with ketchup, vinegar, sugar, and pour in a little water (more or less, thick or thin sauce is up to you). You want to achieve sweet and sour sauce.
  • Pour sauce on omelet, slice, and serve with warm rice. Enjoy immediately
