Fluffy Sweet Buns

Ingredients

Buns

  • 250 ml lukewarm soy milk small portion of this was almond. I was just using up what I have left in the fridge
  • 1 tbsp active dry yeast
  • 500 g flour
  • 52 g icing sugar
  • A pinch of salt
  • 100 g melted coconut oil
  • 1 egg

Filling

  • 250 g turos subs with farmer's cheese
  • 2 heaping tbsp raisin
  • 1 tbsp lemon juice
  • 3-4 tbsp icing sugar

Chocolate Pudding

  • 1 box instant chocolate pudding powder such as from Jell-O mix with 1 c cold milk

Instructions

  • Bloom yeast in milk for 10 mins
  • Beat egg into coconut oil
  • Mix dry ingredients in a bowl, make a well, pour in coconut oil mixture and bloomed yeast. Knead.
  • Cover with cling wrap and let stand in warm area for n hour until doubled in size
  • Once dough ready, Punch down lightly
  • Roll dough and slice into 15 squares
  • Fill half squares with cheese filling and half with chocolate pudding
  • Roll and seam to seal
  • Place on greased aluminum foil lined baking pan
  • Cover with cling wrap and let stand for half H
  • Preheat oven to 350 F
  • Brush buns with beaten egg and bake for 30 mins
