Fluffernutter Cookies

Ingredients

  • 1 c flour
  • 1/2 tsp BP
  • 1/2 tsp BSoda
  • 1 tsp cornstarch
  • A generous pinch of salt
  • 1/2 c coconut sugar
  • 1/3 c sugar
  • 1/2 c unsalted butter
  • 2 heaping tbsp smooth peanut butter
  • 1 egg
  • 1 tbsp vanilla essence
  • 1/2 – 3/4 c mini choc chips
  • Marshmallow fluff as needed

Instructions

  • Mix dry ingredients in a bowl, set aside
  • Mix sugars in another bowl, set to side
  • Cream butter and peanut butter until completely combined, then beat in sugars thoroughly
  • Crack in an egg and add in vanilla essence, beat until combined
  • Set power to low, beat in dry ingredients a little at a time to combine
  • Fold in mini chips
  • Scoop a dough, place on nonstick pan, top with 1 tbsp of fluff, then top it again with another scoop of dough
  • Bake on preheated 350F for 8-10 mins, let stand on pan 5 mins, then move cookies onto cooling rack
  • Let cookies cool completely before enjoying
