oven baked doughnut

Ingredients

  • 1 medium steamed potato 125-127 g
  • 1 1/2 – 1 3/4 c flour
  • 3 tbsp sugar
  • 1 scant tbsp rapid rise instant yeast
  • 1 egg
  • 1/4 – 1/3 c of milk 50-80 ml
  • 30 g unsalted butter
  • 3/4 c dark choc chips
  • 1-2 tsp peanut oil
  • Chocolate rice chocolate, butter, milk based sprinkles

Instructions

  • Mash potato, set to side
  • Mix dry ingredients in a bowl , then add in potato, followed with egg, milk a little at a time
  • With dough spiral hook, mix in butter, for 5-8 mins
  • Let rest until doubled in size, for 40-60 mins
  • Divide into portions of 35-40 g, shape into rounds, then let proof for the 2nd time
  • Bake on preheated 350 F for 15-18 mins
  • Melt choc chips (I used microwave, you can use double boiler if you’re keen), stir in oil
  • Dip the top of doughnut on the melted choc, then sprinkle with chocolate sprinkles
  • Enjoy immediately or wait until choc glaze is hardened (my favorite way)
