Curried Soy Curls

Ingredients

  • 1 1/2 c frozen spinach nuggets
  • 2 c soy curls soak in hot water for 5 mins
  • 2 each of star anise black cardamom, green cardamom, dry fry (toast) then grind to powder
  • 1 1/2 tsp coriander ground
  • 1 tsp cumin ground
  • 1/2 tsp mustard ground
  • 1/4 tsp turmeric powder
  • 1/4 tsp cayenne powder
  • 3 garlic
  • 1/2 of an onion
  • 1-2 tbsp olive oil
  • Vegeta powder to taste
  • 1 can coconut milk

Instructions

  • Make paste from garlic and onion
  • Heat oil, saute paste and spices until fragrant
  • Stir in drained soycurls and cook for 2-3 mins
  • Pour in coconut milk followed with quickly rinsed spinach nuggets , stir
  • Cover and cook on medium heat until spinach softened
  • Season with Vegeta
