Creamy Soup and Ham

Ingredients

  • 1 cauliflower head rice or grate
  • 1 large leek sliced
  • 3 garlic sliced
  • 1-2 tbsp olive oil
  • A pinch or two each of dried marjoram oregano, taragon, basil, rosemary, fennel seeds
  • Hungarian Vegeta powder to taste
  • 1/2 c thick coconut milk
  • 1 L mushroom broth/veggie broth/pho broth
  • 12 baby carrots optional
  • Vegan ham cubed/diced
  • Freshly cracked black pepper

Instructions

  • Heat oil saute leeks for 5 mins
  • Stir in garlic
  • Add in the rest, being to boil
  • Lower heat to simmer for 30 mins
  • Blender until creamy
  • Serve with Ham and pepper
