Chocolate Poke Cake

Ingredients

  • 3 c strong baker’s flour
  • 2 tbsp cocoa powder
  • 2 1/4 tsp double acting BP
  • 1 1/4 c sugar
  • 4 eggs
  • 1 tsp vanilla essence
  • 3 /4 c peanut oil
  • 1 c milk

Pudding Layer

  • 90 g 1 large box
  • Milk

Chocolate Glaze

  • 3/4 c dark chocolate chips
  • 3/4 c semi sweet chocolate chips
  • 250 ml heavy whipping cream

Instructions

Cake

  • In a bowl, mix dry ingredients, set aside
  • Cream eggs, essence and sugar until pale and fluffy
  • Add in some of the flour mixture, followed with oil and milk, then add in flour mixture again, followed with oil and milk, then lastly flour mixture again
  • Bake on preheated 350 F for 45-55 mins
  • Take out from the oven, flip the cake pan, peel off the parchment
  • Poke holes (with a spatula’s end is perfect) and let cool to room temperature

Pudding

  • Once cake is cooled, let’s make the pudding layer, by following the instructions on the box. The measurement of the milk will be on the box as well
  • Let stand for 2-3 mins, spread pudding on top of cake, chill overnight if not at least 2-3 H
  • Now let’s make the chocolate layer

Glaze

  • Heat heavy whipping cream til lukewarm, don’t let it boil, take off from heat, then quickly stir in chocolate chips until melted and well combined. Let stand for 3-5 mins, until no steam, then pour slowly on top of pudding layer
  • Chill overnight if not 3-5 H, before serving
  • Slice and enjoy!
