Chocolate Eggnog Muffins

Ingredients

  • 2.5 c strong baker’s flour
  • 1 tbsp BP
  • A pinch of salt
  • 2 tbsp Cocoa powder
  • 1 tbsp Flaxseeds
  • 2 eggs
  • 1 c of eggnog
  • 1/2 tbsp Vanilla essence
  • 6 tbsp peanut oil
  • 1/2 c packed demerara style brown sugar
  • Semi sweet chocolate chips

Instructions

  • Mix dry ingredients
  • Pulse wet ingredients in food processor
  • Mix dry and wet until just dampened, do not over mixed
  • Spoon the thick batter into greased cupcake pan, top with chocolate chips, and bake for 18-20 mins on preheated 400 F
  • Cool on rack 😎
