Cauliflower Cream Soup

Ingredients

  • 1 tbsp chopped fresh chives
  • 2 tbsp vegetable oil olive oil is best
  • 1 cauliflower head
  • 3 c vegetable/mushroom/Thai broth Thai broth would have different end result (in flavor than veggie or mushroom broth, of course)
  • 3/4 c hulled hemp seeds the secret!
  • 1/4 c nooch

Instructions

  • Heat the oil then stir in cauliflower, cook for 5 mins, to soften
  • Pour in broth and keep cooking until cauliflower is tender
  • Pour cauliflower and its broth into an electric blender, add in the rest of the ingredients, process until smooth
  • Serve immediately
