Mocha Pandan Sponge Cake

Ingredients

  • 2 eggs
  • 1 c sugar
  • 1 tsp Ovalett cake emulsifier, available online
  • 1 3/4 c strong baker’s flour
  • 250 ml lukewarm milk
  • Pandan and mocha paste for flavoring and coloring

Instructions

  • Preheat your steamer
  • Beat eggs, sugar and emulsifier for 7 mins, until fluffy and pale
  • Beat in flour and milk, alternating one after another
  • Divide batter into two, stir pandan paste to one, and mocha paste to the other
  • Scoop batter into individual molds that have been lined with cupcake wrapper (can be alternating color, can be separately, can be marbled, it’s up to you)
  • Steam for 15 mins, wrap steamer lid with clean towel to avoid water drips
